Things are lookin' up, people.  I mean YEAH – it's been raining virtually non-stop for the last few weeks.  And YEAH – I'm still livin' over here in Philadelphia where I have no friends or family and YEAH – over half of our stuff is still in boxes in the basement which flooded two days ago….but UP.  UP is where I'm looking.

It must be this runner's high of mine.  

If one, can, in fact, get a runner's high from 8 minutes of running.  Which is all I managed the last time I ran.  I'm just so. darn. tired.  But still – it was 8 minutes of running.  So I'm going to call myself a runner, eat an extra brownie (I've grown fond of my pooch anyway), and keep on keepin' on.  And looking up.

  1. I love the brownie recipe off the can of Ghirardelli chocolate – and then I play with adding orange extract, or mint extract, or pepper…or whatever I’m in the mood for. Yum!

  2. Brownies Recipe…I love them when they are dense and perhaps a little oily. I’ve only ever been able to make them that way using the Duncan Hines mix. Sorry to be boring, but there it is.

  3. So I can’t do gluten, but there are lots of good brownie mixes out there– there is one made by a company called Pamela’s that seriously is like brownie crack, gluten or no gluten.

  4. Oh boy…I never use a “real” recipe, but I do love those Giradelli boxed numbers. I think the beauty of brownies might just be the make-at-the-last-minute-ness of them. πŸ™‚ Shared on FB.

  6. I think the only brownies I have ever made came from a box…but there is one boxed mix that has teeny tiny peanut butter cups in it. YUM.

  8. the Ghiradelli mix is definately where it’s at. and they have different levels of dark chocolately goodness. yum! i bet the paula dean recipe above is pretty great, too.

  9. I liked on FB – I love this outfit – it’ll be perfect for post-maternity trying to work out prepping myself for next year’s Avon Walk.
    As for brownies, I’m a sucker for the cheesecake brownie swirl. Love the solid gooeyness of the cheesecake with the sweetness of the chocolate brownie!

  10. I have never made brownies from scratch but I believe I will try this weekend! I usually make the box mix – Ghirardelli – and love to either add peanut butter chips, or “layer” a Symphony bar inside the brownies…yum, yum, YUM!
    PS – I LOVE the outfit. I am 6 mo. along with #3 & keep wondering if this bump I have right now will resemble how I look post-partum as well!

  11. All these brownie recipes are dangerous to my pregnant, chocolate-craving self! My all-time favorites are mint chocolate brownies. I’d have to ask my mom for the recipe, but basically, you make cake-like brownies, top with buttercream frosting that has peppermint extract (and green food coloring, if you wish). Then, you melt butter and chocolate on the stovetop and pour it over the top to make a harder chocolate topping. So delish!!! (“liked” the post on fb)

  12. My favorite recipe for brownies? Um, really, I just buy a box, add chocolate chips, and pray they don’t burn! But mmm are they good, especially if I can get them while they are warm and just a bit gooey.
    Man, now I want.

  13. I would say my old favorite was Ghirardelli box brownies. But with a new gluten free diet I’ll go with Bob’s Red Mill gluten free brownie mix. They are actually my husband’s favorite brownie!

  14. I have an awesome recipe. I literally made this at LEAST once a week (ok every other day….) during my last month of pregnancy!
    Preheat oven to 350.
    Bakes for 30 minutes
    2 oz. unsweetened chocolate
    1 stick of butter
    3/4 c. flour
    1 c. sugar
    2 eggs
    1 tsp. vanilla
    Melt chocolate and butter together in medium saucepan. Then add sugar and mix. Add eggs and vanilla and mix. Add flour. Pour into greased 8×8 pan and bake!

  15. Love the “No Pudge” brownie mixes – especially since they have no eggs and can be eaten straight from the bowl. Also, any brownie mix with peppermint patties layered in the middle is one of my favorite ‘recipes’.

  16. My favorite brownie recipe is anyone else’s covered in Breyer’s vanilla ice cream and hot fudge. Oh. Yes.
    And THAT, my darlings, is why my posterior is not inferior.
    And I might have knocked my toddler over with it a few times. Seriously. *blushes* So the hubs and I are running now, more for my toddler’s safety than my health. I needs workout clothers. Big. Time. PLEEZ?

  17. Yes, I have to agree that you can’t beat the Costco box of 6 pouches of Ghirardelli Triple Chocolate brownie mix. We always have it on hand and it gets rave reviews every time! They are super chocolatey and the three kinds of chips (semi-sweet, milk, and bittersweet) keep them ooey-gooey! My husband even makes them :). Liked article on FB.

  18. The best brownies are the ones you didnt have to bake! My advice- find an artisan bakery within walking distance and buy yourself one! Have you tried Mqt Baking Co?

  19. My mom’s brownies are awesome! She uses a melted chocolate frosting on top and the whole thing is To.Die.For. Recipes below with commentary from my mother.
    Also, hate to tell you dear, but this is the start of the rainy season ’round these parts. Starts raining around now, and quits just in time for a big blizzard-like snow storm. Did I mention that we live in a climate uninhabitable to normal life? When the Continental Army was stationed here during the Revolutionary War, they got hazard pay because of the climate.
    Brownies
    3/4 cup powdered cocoa
    2/3 cup + 1/4 cup shortening (I think Crisco makes really good brownies, but can use butter)
    2 cups sugar
    4 eggs
    1 tsp. vanilla
    1-1/4 cups flour
    1 tsp. baking powder
    1 tsp. salt
    Melt shortening. Mix in sugar, eggs and vanilla. Stir in remaining ingredients. Spread in 9×13 greased pan.
    Bake 30 minutes or less in 350 oven. DO NOT OVERBAKE.
    Fudge Frosting
    1 stick butter
    2 tablespoons cocoa
    6 tablespoons milk
    Bring above to a boil. Add 1 box of powdered sugar (if you sift it you get out the lumps, but that doesn’t really bother me). Pour over brownies or cake while warm.

    My favorite brownies are chewy, gooey fudge brownies with mint frosting. I use a regular brownie recipe. Then, whatever frosting recipe I feel like using (sometimes this means it comes out of a can.) Then I add mint flavoring and green food coloring to the frosting. Sometimes, I get fancy and add crushed candy canes on top. This is assuming that the brownies do not disappear while I am crushing said candy canes.

    My brownies always come from a box, but I couldn’t tell you which brand I prefer b/c I don’t eat them often enough to remember. Really should do something about that…which would require more workout outfits. πŸ™‚

  23. We can’t eat gluten at our house, so my favorite recipe is gluten-free:
    Brownies (Gluten-Free)
    1/3 cup unsweetened cocoa powder
    1/3 cup olive oil
    2 large eggs
    1 Β½ tsp. vanilla
    1 cup sugar
    Β½ tsp. baking powder
    ΒΌ tsp. salt
    ΒΌ cup white rice flour
    ΒΌ cup brown rice flour
    ΒΌ cup tapioca starch
    Β½ cup chopped walnuts
    Preheat oven to 350 degrees Fahrenheit.
    Combine cocoa and oil together in a small bowl until blended.
    Whisk eggs and vanilla in large bowl. Whisk in sugar, baking powder and salt. Stir in cocoa mixture, white rice flour, brown rice flour, tapiocha starch and nuts.
    Pour mixture into lightly greased 8-inch square pan.
    Bake 25 to 30 minutes.

  25. I wasn’t sure if you wanted us to comment here or on FB so I’m doing both! I usually use a box ’cause I’m lazy like that when it comes to brownies (I usually love to bake from scratch so I’m not sure why brownies in particular scare me off but they do), but if I were going to make them from scratch I’d use this recipe: http://www.joyofbaking.com/brownies.html because all of her recipes I’ve tried (which is at least half a dozen) have turned out super delicious!

  27. Ghirardelli boxed brownies (dark chocolate is my fav). Once cooled, cover with thick layer of cool whip. Next, top with different fruit like blueberries, strawberries, raspberries, kiwi, peaches. Put in fridge and serve cold.

  28. I love all brownies…never turned one down! But if I had to pick a favorite brownie, it’s probably the Pillsbury Chocolate Chunk brownies that are screaming my name in the cupboard right now!

  29. I can’t eat anything with Gluten. This USED to mean that I couldn’t eat brownies (since I don’t actually, like, bake). But hallelujah, there are now several decent, gluten-free brownie mixes! I modified my mother-in-law, Connie’s, chocolate cake recipe (which begins with a chocolate cake mix) and added some chocolate chips to invent this (my fave) brownie recipe:
    1 box gluten-free brownie mix (I usually use Pamela’s, but Betty Crocker also now has one)
    1 can cherry pie filling (double check for gluten ingredients!)
    1 small pkg. chocolate chips
    Prepare brownie mix as directed on the package. (If using Pamela’s, there are multiple different sets of directions. I prefer the fudgy one.)
    Add can of cherry pie filing and a handful or so of chocolate chips to the brownie batter.
    Pour into baking pan and sprinkle more chocolate chips on the top.
    That’s all, folks!
