For about the last two years, my husband and I had been making the same comments to each other about how badly we needed to purchase new cookware. The set we had from when we were first married was great, but after the last decade of usage, they were showing far too many signs that we needed an upgrade. When we first purchased the Always Pan, we gave it a test drive with all our everyday simple foods — eggs in the morning, basmati rice to accompany our baked salmon, and even pasta. The basmati rice was honestly more perfect than I’ve ever made (I’m now realizing it was my old pans’ fault for all the inconsistencies, NOT MINE!) and as skeptical as my husband was about cooking pasta in this pan, a full bag of our favorite organic pasta from Costco cooked up beautifully, even straining right there in the pan thanks to the spout.
For my husband’s birthday earlier this year, we made some of the Persian recipes passed down by his family and the Tahdig came out perfectly (I’ve got my eye on the Tahdig Trio for when it’s back in stock to make cooking our favorite Persian rice even easier!). Now that my little man is old enough for solids, it’s been so fulfilling to make his food; I’ve been steaming vegetables with the included steamer, and it’s brilliant!

My husband is such a good cook and has already been test driving delicious veggie skillets in preparation for my first Mother’s Day (he’s so cute), and now that we own the plates & glassware from Our Place, we’ve got everything we need for the most idyllic brunch setup! I bought the always pan around Xmas on sale after Emily featured it and it seemed like it was all over the internet. I received the back-ordered pan mid January. It’s now mid April. I regularly have to soak the pan all night to get it clean. Food sticks almost immediately. I agree that for the first 2-3 months it was magical, but I’m annoyed that a $100 pan is working less well than my $30 target nonstick pans. We cook daily, and this was a huge disappointment. (We also have not put it in the dishwasher and use high heat sparingly, following user instructions.) It appears other users have had this experience when I did a quick google search, so buyer beware on this one. Maybe others have had better experiences – I hope so! I wanted it to work! – but this was not a successful purchase for our family.
Oh no! I’ve used mine for months now as well but haven’t run into any of those issues. I just gently wash it right away after it has cooled and haven’t had any sticking issues! We have a gas stove that gets super hot, but I still use it on Med/High heat with success. I love it and use it at least 4x a week. It’s become my favorite pan! Especially for eggs. I will say for high heat stuff I still stick to my cast iron. But for everything else I use this!
Hi Avery — dang, what a bummer to hear! I know Laura also chimed in, but I’ve had such success with mine, and we’ve used it regularly since that post was published. (And honestly, at this point, if it wasn’t up to snuff, I would feel comfortable saying so.) We do use it religiously on medium heat or lower, and I find that it conducts heat so well that I don’t feel the need to kick it higher, even for boiling water. And, like you, we hand wash it, but we do so right after dinner typically. (I’ve not yet had to soak it yet, but my cast-iron pans have me programmed to avoid soaking at all costs, lol.) I wonder if there was an off run along the way that caused a few flawed pans, and if it would be worth it to reach out to the company? I honestly can’t imagine ours performing better, so I feel terrible that I steered you wrong!
I almost pulled the trigger on this pan. Beautiful and can replace 8 pieces of cookware? MAGIC. However it is not oven safe. Be warned!
